Apple Pie is one of my most favorite "fall" things to make. It reminds me of the holidays and family, and that is comforting....I think.

Cake Cake...Ice Cream Cake!
Who loves ice cream? How about ice cream cake?
Since summer is over as of September 22nd, I thought I had better make this summer-like treat(I miss summer already!). And it is so easy! Pretty sure it is about as easy to make as it is to eat. Now-that is easy. Plus, I knew this treat would score some brownie points with my family and my husbands family. You think your family eats a lot of ice cream, I think my dad is up to the challenge to see who eats more. This man eats a soup bowl up ice cream after dinner AND supper, syrup and all. My husbands family-ice cream is the treat of choice. So, when I made this ice cream cake, I made two so each family could have some.

Elderberries
This past summer, I feel as though I have became even more domesticated. I have learned how to can and even make jam. I have made jam before, but let me tell ya, it wasn't too good. It was so thick, there was no way to even spread the stuff!
So, my sister had called me to let me know that I could come pick some elderberries. I have never had elderberries, but I had heard that they were not a lot of fun to pick, and you needed a lot to make something.

UNREAL...
Lately in the mail I received a coupon for a candy bar from Bzz Agent to try out.
This candy bar is called UNREAL. I have seen these candy bars all summer at places like CVS and Walgreen's. I have just been waiting for a sale to buy one! So, I was extremely happy to get a coupon to try it for free! One night when I was at Michael's, I decided to pick it up.
One Word...Yum!
I think the best thing about these candy cars is there "unjunked." This means that they do not have anything artificial, no hydrogenated, no corn syrup, no preservatives, and no GMO's! That caught my attention right away!
When eating my UNREAL 8 Bar, I noticed it tasted a little different. But, I mean in a good way. It didn't taste all chemical-like. You know how chocolate can sometimes taste chemically or cheap? Not this stuff, it tasted like an expensive, high quality chocolate. I ate it right up. Now days it is great to have something that is more natural anyways....and it is CHOCOLATE!
So if you need a treat, I am going to tell you to give UNREAL a shot. Because, just like its name, its unreal!

The Big County Fair...
Big? Ok, that might be misleading.
A few weeks ago, we had our local county fair. For the first time ever, I entered some things that I had baked and decorated in the fair! It was an very busy week! I only had 11 entries (I guess there was a grandma that enters something in almost every lot!), but I did pretty well!
I received a Grand Champion Flag, 6 First Places, 2 Second Places and 1 Third Place. Not too shabby for a newbie!
I also squeezed in a cake for a great little cousin!
Now, to start planning for next year...

Fish Tacos
I have wanted to try fish tacos forever!
well, maybe not forever, but a long time...
Anywho, I decided to go ahead and give them a try one night. Now, there is something to keep in mind-my husband is not really a fish guy. He will eat shrimp, and it pretty much stops there. I needed to keep it simple enough to, well, hide it from him.
Guess what? I was successful! This is strange since I would think he would have been able to smell it coming in the house or even putting it on his taco...I could taste the fish, so I am not sure how he couldn't-maybe he thinks he doesn't like it?
Fish Tacos
Serves 2-4
adapted from fish tacos
1/4 c Sour Cream
1/4 c Mayo
1/4 c Fresh Cilantro, chopped
1 pkg. Taco Seasoning
1 lb. Tilapia, cubed
2 T Lemon Juice
1 T Olive Oil
1 T Butter
Tortillas
Lettuce (optional)
Pico (optional)
Onions (optional)
Mix sour cream, mayo, cilantro and 1 T of the taco seasoning in a bowl. Warm oil and butter in pan. Mix fish, lemon juice and taco seasoning(add to taste) in the oil/butter until flaky. Warm the tortillas. Fill with the fish, cilantro topping, and other toppings.
